So on a warm weekday, I suddenly long for a very green meal with a hint of carne. Well, this story is so short because spinach is all I can think of. So here it is.
Creamy Spinach Pasta: 200gr penne, 2 large bunch of spinach, 5 large shiitake mushroom, 5 thin slice of roast beef, garlic, chives, 200ml cooking cream, 200ml milk, ½ tsp nutmeg, salt, ground black pepper.
Blanche spinach in a pot of salted water, cool rapidly with cold water and chop. Retain the water to boil penne. Thinly slice mushroom and cut slice roast beef into 1 cm strips. Saute mushroom in a little oil with , throw in roast beef, continue sauteeeing until fragrant. Boil cream, milk, and garlic until reduced. Put chopped spinach, nutmeg, chives, salt and pepper. Reduce further for another 3 minutes. Remove from heat. Add coked pasta and sautéed muchroom and roast beef. Garnish with chives. Sprinkle with parmesan if you like.
