For a change, instead of deciding what the kid should eat on the Sunday Cooking Challenge, I asked the kid what he wanted to eat. “Crispy Chicken. KFC,” he said. Hmffffftttt….really? Really? I should make a rage comic out of this. Then the third breath after, I said to him,”OK. I’ll make you crispy chicken, but they will not be KFC kind of crispy chicken. They will be my kind of crispy chicken.” You should see the skepticism on his face, in his eyes. Of which I should make another rage comic.
Baked Crispy Chicken: 4 pcs of chicken thigh, 3 eggs, 1 package cheese cream crackers (crushed to crumbs), 2 cups breadcrumbs, 2 tbsp parmesan, ½ tsp paprika powder, 1 tsp crushed black pepper, 3-4 chives (finely cut), 1 tbsp celery, 1 tbsp salt , 1 tsp garlic powder.
Marinate chicken with salt and garlic powder. Set aside in fridge for 20 mins. Combine crushed cream cracker, bread crumbs, parmesan, paprika, black pepper, chives, and celery in a large bowl. Lightly beat the eggs in another bowl. Coat the chickens with crispy coating then dip in egg then coat again in crisps mixture. Put in prepared baking pan already covered in olive oil. Bake in prepared oven, 200° for 20 mins then reduce heat to 180° and continue roasting until full 1 hour. Use fan force for the last 15 mins.
